If you like unoaked Chardonnay, this is one for you; it is one of my "go-to" wines when I can't decide which bottle to open because it is consistently good year on year. And 2103 is no exception; in fact it achieved better scores than the 2012 though neither was the easiest of vintages. Although categorised as crisp, light white, it has a medium body and is developing butteriness so verging on a rich, creamy white.
Apple and citrus fruits, lemon oil plus minerality and floral notes of jasmine and honeysuckle, a typical and really good Premier Cru Chablis. There is a refreshing acidity combined with a smooth texture. Delicious on its own or with food. This is very drinkable now and will develop further richness over the next five years.
Recommended for drinking with oysters, other shellfish and fish generally, foie gras, chicken, fruit-based desserts.

"Due to be bottled in September, the debut 2013 Chablis 1er Cru Vaillons Vieilles Vignes sees no wood contact. It has a potent lemon thyme-scented bouquet that races out of the blocks. There is no messing about here. You want Chablis? You got Chablis. The palate is crisp and fresh with lovely lime and piercing citrus notes, crisp acidity and a taut, linear finish. Very fine and with a class that only might need time to be realized."

"The 2013 Chablis Vaillons is quite pretty. Hints of tropical-infused fruit resonate throughout in an expressive, pliant Chablis with plenty of personality. This is a surprisingly dense, rich Vaillons, but all the elements are in balance."
