I nearly didn’t try Barbadillo Sábalo 2020 at a trade fair I attended because the Palomino grape variety is most frequently seen in the fortified wine, sherry, and I thought it would have those nutty, dried fruit flavours of sherry (fine in sherry but I didn’t want them in a still wine!). In fact this dry white wine, Barbadillo Sábalo Vino de la Tierra de Cádiz 2020 to give it its full name, is fruit-forward and tastes of apples, pears and light peach. Whilst it does have a whiff of refreshing salinity from the nearby sea and marshlands, it doesn’t have a hint of the nutty, sherry flavours. Plus it’s an organic, vegan-friendly, unoaked white wine.


Barbadillo Sábalo Vino de la Tierra de Cádiz 2020 is medium to full-bodied yet light and refreshing. It reminds me a little of chenin blanc but is lighter in body and crisper. As well as the apples, conference pears and hint of white peach on the nose and palate there’s a hint of almonds, spices and citrus mixed in with that salinity. It’s amazing.


Barbadillo is a producer well known for its fabulous sherries and so I should not have been surprised that they have produced such a great still wine in Barbadillo Sábalo 2020. The Palomino grape makes fairly neutral wines and so it needs to reflect its terroir to give the wine some character – Barbadillo’s vineyards benefit from the famous chalky ‘Albariza’ soil of the region and according to the producer “the wine’s great finesse and delicate flavours are a reflection of both this soil and the vineyards’ proximity to the sea and the River Guadalquivir. The grapes come exclusively from two certified organic vineyards.”

How to enjoy this wine

The producer says this wine is “ideal for accompanying fish dishes. For the more innovative palates, why not try it with tofu, artichokes or cheese”.

“Appearance: Clean and bright. Gold in colour. Nose: Complex ripe apple and peach nuances with spicy notes. Palate: Ample and creamy on the palate with light notes of ripe fruits and smooth saline nuances.


Pale straw in colour with clean subtle aromas suggesting mature apples. On tasting, it is surprisingly full and silky with an ethereal sweetness despite being a dry wine. On the palate one senses soft mineral notes reflecting the chalky terroir origins.”
