Winemakers Etienne Boileau, Christian Simon et William Nahan joined forces in 1987 to make the most of their individual skills and created Domaine du Chardonnay. Their wines have been marketed as both Etienne Boileau and Domaine du Chardonnay. The winery is now run by William's son, Arnaud, and Thomas Labille.
The Montée de Tonnerre premier cru site is well known and one of the best in Chablis. Their site is just over 2 hectares and is looked after with great care to bring out the best of the vines and the terroir. Recently the vineyards' sustainability practices were recognised with Level 3 Haute Valeur Environmentale certification. In the winery temperatures are controlled to bring out all the aromas and to keep the wine's fresh fruit and mineral characteristics.
Chablis prices have rocketed in the last few years partly due to reduced volumes after frosts but I discovered this gem of a Premier Cru Chablis whilst steering away from the bigger domaines to find value. and I have certainly found that; aside from the good value, this is a really beautiful Premier Cru Chablis.
The initial impression is of a delicate wine but the aromas and flavours open up in the glass especially if it's not served too cold - yellow plums with a hint of soft pineapple and lemongrass. The wine has complexity whithout being heavy and is quite crisp. Like many Premier Cru Chablis, part of the wine has been aged in oak - just 20% - to assist with the development of complexity and body and that is evident in a hint of toast and vanilla. Best of all is the silky texture and the long, long finish which goes on and on...

Recommended for drinking with oysters, other shellfish and fish generally, foie gras, chicken, fruit-based desserts. The producers recommend drinking with fish in cooked sauces, langoustines & lobster, white meats, goat's cheese and ewe's milk cheeses

"The 2015 Chablis 1er Cru Montée de Tonnerre has a clean and precise bouquet, with flint and yellow plum notes that gently unfold in the glass. The palate is well balanced with a pineapple and guava-tinged opening, a vein of lemongrass and quite a precise, expressive bouquet that lingers in the mouth. This is the best offering from Domaine du Chardonnay this vintage."
